Tiramisu from the Amalfi Coast

  • 1 ¾ lbs. simple sponge cake or lady fingers
  • 1 teacup coffee (strong, cold, and unsweetened)
  • 9 oz. heavy cream, whipped
  • ½ glass rum or brandy
  • 9 oz mascarpone (Italian soft cheese)
  • 5 eggs
  • 7 T. sugar Some unsweetened cocoa

 

Prepare the cream mixture by beating 3 egg whites and 2 yolks with the sugar, add the liquor and mascarpone, then carefully fold in the whipped cream. Take a steel or glass rectangular baking pan and pour some of the cream mixture on the bottom. Cut the sponge cake into rectangular strips (approx. 3 in. long, 1 in. wide and ½ in, high). Place the strips on top of the cream. Mix the coffee with an equal amount of cold water and moisten the sponge strips with it. Then cover with a layer of cream mixture and sprinkle with cocoa powder. Continue layering in this way until you have used all the ingredients. Sprinkle cocoa powder on the final layer. Serve very cold.

Best if made at least 24 hours ahead of time.
