German Puff Pancake with Mascarpone Cream & Berries

This extra special and decadent Puff Pancake  is one of the dishes from our extensive repertoire that we serve on  our Breakfast in Bed Packages,  Texas Romantic Weekend Getaway Packages, and Elopement Packages at the B&B.  It is easy and yet absolutely delicious and will make anyone feel special when prepared for them.  Side it with some devilishly good smoked salmon, eggs, Texas toast, Mimosas & hot fresh coffee!  Your  loved one will know they are special!!

Romantic Weekend Getaway Package Recipe

  • 1 cup flour
  • 1 cup milk
  • 4 beaten eggs
  • pinch of salt
  • 1 tsp.  vanilla
  • 1 Tb. sugar
  • 1 Tb. butter
  • sliced strawberries, blueberries, raspberries
  • zest from one orange
  • powdered sugar, to taste, plus  more  for dusting
  • 1/2 cup ricotta (whole milk)
  • 1/2 cup cream cheese or mascarpone
  • honey or syrup
  • nuts of choice, chopped

Preheat oven to 450 degrees F.  Whisk flour, milk, eggs,  salt, vanilla and sugar to mixed.  Melt 1 tablespoon butter each  in two different  8 inch oven proof skillets or ramekins.  Pour 1 cup of batter in each skillet, swirl it around and place it in the preheated oven.  Bake 20 – 25 minutes.  Sides will  puff up, creating the perfect vessel for filling.  Remove from oven and fill inside with sweetened ricotta and cream cheese mixture.  Top with berries, dust with powdered sugar and slice into generous wedges for serving.  Top with chopped walnuts and drizzle honey or maple syrup over each slice for the perfect ending!

Note:  Adding a little orange or amaretto liqueur to the batter enhances the flavor!
